Za’atar Fire Crackers

Combine olive oil, za’atar spice blend, crushed red pepper, and garlic powder in a 1-gallon zip-close bag. Seal bag, and gently massage oil and spices to combine. Add crackers. Reseal plastic bag, and shake until crackers are evenly coated, about 30 seconds. Open bag, and press out any excess air while distributing crackers in an even layer. Reseal bag, and lay flat on a work surface. Marinate at room temperature, shaking bag every 1 to 2 hours, until seasonings penetrate crackers, at least 6 hours or up to 12 hours.
Preheat oven to 250°F. Remove crackers from bag, and spread evenly on a large rimmed baking sheet; scrape any remaining spice mixture from bag onto crackers. Bake in preheated oven until crackers are light golden brown and toasted, about 15 minutes. Season with salt to taste, if desired. Let crackers cool on baking sheet about 5 minutes before serving.

1 (9-ounce) package oyster crackers
